Gluten intolerant or diagnosed with coeliac?  Good news! Being gluten free in London is no longer an obstacle. Many of our bakers have changed and refined their recipes to market their cakes to accommodate people on a gluten-free lifestyle.  In baking, gluten is a protein found most commonly in wheat, barley,spelt and rye. Although, gluten in cakes are quite low, the gluten stops the cake from crumbling or collapsing. It give the cake structure and texture. So how do you create cake without the common ingredient, wheat?

To substitute wheat flour, our baker uses polenta, ground almonds, tapioca, potato starch, rice and chestnut flour. To further help bind the ingredients together our bakers use xanthan gum, chia seeds, flax seed or psyllium husks giving the cake the characteristic it requires while maintaining it gluten-free. Our bakers have tested the recipes again and again to find the ideal combination and ratio of ingredient to create mouth watering gluten-free classic recipe cakes for you to enjoy. They taste so amazing you wouldn't even realise it is gluten free!
All cakes are made to order. Please allow 48 hours for our bakers to create and deliver your cake. In the event, the original baker is unavailable, we will assign this cake to another suitable baker. As all our cakes are hand made, there may be slight variations in the design.
