T'was the Cake before Christmas

It’s almost everyone’s favourite time of year again.

With Halloween over, there is nothing standing in the way of Santa Claus and his happy little elves spreading joy, merry and mirth across London.

Not A Raisin In Sight

To paraphrase 2unlimited "no no, no no there're no raisins."

We realised that the traditional Christmas cake isn’t to everyone’s taste.  Whilst this cake may look every bit the traditional Christmas cake it comes in a range of our delicious flavours with not a raisin in sight.

Ingredients:

  • 250g (8oz) room temperature unsalted butter
  • 125g (4oz) caster sugar
  • 240g (7 ½ oz) plain flour
  • Raisins/ chocolate chips optional

Things you’re going to need:

  • 2 x baking trays
  • Baking paper
  • Christmas cutters - we recommend Christmas trees, Santa Claus and Rudolph the Red-Nosed Reindeer cutters.
  • Biscuit decorating kit - icing pens, sprinkle mix
  • Enthusiastic participants

Method

  1. Firstly, heat your oven to 150°C or gas mark 2
  2. Take 2 oven trays and line them with baking paper. Then beat the butter in a bowl until it’s nice, soft and smooth.
  3. Add your plain flour and the caster sugar and work them with a spoon until fully blended. Throw in some raisins or chocolate chips if you’re feeling a bit funky. Knead the dough on a floured area to form a nice firm dough. Allow your masterpiece to chill out for about 20 minutes. This is the perfect time for everyone to choose their Christmas cutters!
  4. Split the dough in two and roll each out in between 2 sheets of baking paper aiming for about ¼ inch thickness.
  5. Cut the dough into an assortment of wintery and wonderful shapes then place them on an oven tray and bake for about 15-20 minutes. They should be pale and dry when they are ready to come out!

Now for the fun part! After your shortbread has cooled down, gather around the table and get those creative Christmas hats on!

Decorate your Christmas shortbread any way you like and then store them in an airtight tub for up to one week.

Whatever you do, don’t forget to leave some out for Santa!
